USE TIP - AVOID HARD FOODS

Do not use ceramic knives for tasks that cause torque or twisting of the blade, such as forcefully cutting through frozen or hard foods. The blade material is very hard and does not have the flexibility of a metal knife. Ceramic knives are meant for everyday slicing of fruits, vegetables and boneless meats.

Always use an appropriate cutting surface such as plastic, bamboo, or wood cutting boards. Avoid cutting on glass or marble cutting boards.     I love the Kyocera knives. I tried a cheaper ceramic knife but it was absolutely a waste of money. If you have not owned ceramic knives, you really have to be careful not to drop it and, for heavens sake, do not use it as a pry tool. They will break.

    I had another Kyocera knife like this for daily kitchen use for about 15 years. One day it finally broke when I was chopping some very crispy bacon. I couldn't fault the knife, since it has really put up with a lot over the years. I was just using too much pressure to cut the bacon... On this new one, the handle seems to be a little cheaper plastic than the old one. It is more ergonomic though.

    The blade on my old one had some circular grooves (like an old vinyl record) in the sides of it which kept food from sticking to it as you cut things, such as carrots. On the new one, the blade is almost too smooth on the sides, since pieces of carrot tend to cling to the side of the knife and can get in the way. Just takes a little getting used to.

    The cutting edge is amazingly sharp, as expected.

    Remember to always cut on PLASTIC cutting boards. Paper and ceramic plates, or wood and glass cutting boards will DULL ceramic blades. If you use plastic cutting boards, this knife will stay sharp for years. If you get knicks or it gets dull, you can send it back to Kyocera for sharpening at a minimal price. But now these are so inexpensive, they are almost disposable after a few years of use.

    I've had my Kyocera knife for 1 1/2 years, and it was great to use, but I've recently noticed that the blade edge has become rough. Where did the glass that was along the edge go? Most likely into my food and hence into me, and in very small pieces. I only cut tomatoes and fruit with it. This is not a risk I want to take. No more ceramic knife for me, I've just ordered a nice steel bladed replacement.

    These knives are incredibly sharp and will stay that way if you use them correctly! This is my 7th Kyocera knife. Aside from my own personal set of Kyocera knives, I buy them as gifts for my kitchen staff. (in a professional kitchen)
    They are most useful for julienne lettuce. The ceramic blade will not cause the lettuce to turn brown !!! These knives are also very light and will lessen the usual fatigue on the hands of those who cut, chop and dice for hours at a time.
    Do not use these knives (or any ceramic blades) on hard items such as carrots or sweet potatoes. Changes are good you may chip or break the blade. Also, try not to drop the knife, it will break if it hits a hard surface with enough force.
    Don't use these for cutting product with bones, don't use them to butcher down a whole chicken. The blade doesn't bend like a boning knife and the ceramic blade will chip or nick if it hits bone.
    In our kitchen, we like these little ones for small tasks such as slicing whole olives, slicing mushrooms and slicing strawberries. We use the larger chef knife version for making julienne strips out of whole lettuce heads and slicing tomatoes super thin.
    Kyocera will always be the only brand ceramic knife used in our kitchen.
